This reminds me of my local Wendy's in California. They are also putting an effort into eco-friendly practices, and a thrive for sustainability. The approach to using fresh and organic ingredients in Wendy's menu is appreciable and helps in having a refreshing lunch/dinner experience.

I totally agree, it's a breath of fresh air to see Tartine's approach and their dedication to sustainability, which is super important in the food and agricultural industries. Hopefully, more businesses will follow suit and we will see this becoming the norm, rather than a shining example of how to do it best.

Just of curiosity, are there any other businesses that you know of who have a similar approach in the food industry, or any other industry for that matter?

Also, I'm really curios to know what Koi's new dish was, and also a little jealous that I don't have access to it in Ireland!
