Option to not sync content online isn't there.
I can no longer choose to sync or not to sync a certain file.
Is that option no longer available for Windows 11?
I still have that option on my older device using Windows 10.
Can someone show me how I can do so with my newer device?

That should still be a working feature, with different steps though. Can you try to follow the steps mentioned in this Help Center article?
