Folder owner > Space

If I passed the ownership of the folder to someone else and removed my own access, the occupation space of this folder is now in this person's dropbox, right?

Yes as long as you also delete the files from your account. 

 

Note that in shared folders every person has their quota reduced while in shared folders - regardless of being owner or not.
