The easiest and fastest method would be to install the Dropbox app (make sure you don't enable the computer backup feature!) and just allow all of your files to sync down to your computer. Once complete, uninstall Dropbox. It's then safe to delete your account.
The automatic computer backup feature is an option presented during installation, but many people seem to be enabling it without realizing, so it's likely easy to miss. Since your goal is to delete your Dropbox account, you want to make sure you don't enable this. If you do enable it, your Desktop, Documents and Downloads will all be moved into the Dropbox folder and synced to your account online.
