I have been searching for the method, but it doesn't look like there is an easy way other than using symlink, which I am afraid could cause other problems.
Is there any easy way to change it when installing, or even after the installation, to a location other than my home folder?

If you’re using the headless install, then currently there isn’t a way to change the location of the Dropbox folder via the Linux commands available.
If you wish, you can share this as an idea here for other users to vote on it for the dev team to look into this in future!
