I have a Macbook Pro 2017, updated Big Sur. My question is this:
I'd like to have the Dropbox folder on my mac, but when dragging a file there, to the local folder, I want it to be stored ONLINE and not local as well. Is there a way to do that?
Because that's why I bought Dropbox was to save room on my mac. And it's not doing what I thought it would.

The file needs to exist locally first to be able to sync to your account. Once the file has synced, you can use Smart Sync to mark it as Online-only and it will be removed from your local drive.
