I have enabled Windows Security Protected folder access on all my personal Windows folders, e.g. Music, Favorites. Now Windows Security detects Dropbox trying to access those folders and blocks that, giving a notification about it.
Why is Dropbox engaging in this suspicious behaviour?
Of course I want Dropbox to stop doing this. Is this something I can configere?

That does sound strange indeed. Do you perhaps have any symlinks within your Dropbox folder pointing to files in external locations?
If you'd like to check this, the steps to do so are outlined in point 7 here.
Also, would you mind sharing a little more info on what was reported by Windows Security?

Hello Daphne, that is a prompt pick up of my call!
I do not know what symlinks are. I am not an experienced Dropbox user. Installed it for the first time. Changed its folder location and that's it.
However, I have turned on in Windows Security a feature that is not default which does some extra protection. Also note that I am on the slow preview ring, so this might be something new. Nevertheless it surprises me that Dropbox tries to access those folders, as I can't think of any reason why it should. As you can see in the list, it tries it rather frequently.
