So, a dumb question. When I hook up my phone to add pic to my dropbox in my computer it downloads all the pics and videos and I have to go through and delete all the stuff I want. How do I do it so that I can select only the pics and videos I specifically want?

It sounds like you have enabled the automatic camera uploads feature.

Maybe you can try to upload the photos selecting directly from your gallery. You just go to the app, select records, and then press the icon "+" in the folder you want to save it,  then select upload photos and finally select the photos you want to upload.
