I am researching for a small business owner; she is concerned about the future possibility of an employee intentionally deleting folders before leaving the company. She would like to be able to synch shared folders to a non-shared archive site, whether on a personal computer or external hard drive. This would be a daily backup of files. Is this feasible, or are there better, more secure options?

Agreed! Mainly Dropbox has snapshots of your documents in the business account up to a certain extent. I would recommend as above to have a Backup System (Cloud or Local) say in case your files are corrupted or Internet is unavailable and other multiple scenarios that can happen.
