I make changes in a document, save, but it reverts to an older version. I tried restoring from previous version, then downloading, but each time I save to the Dropbox, it reverts to the older version. If I keep it on my desktop, it's fine. What's going on?

Are you using the Dropbox website to download/open the files? If so, when you've made your chnages and saved the files, are you uploading them back to Dropbox? If no, then all you're doing is saving them to wherever they were downloaded on your computer. You then have to upload them back to the Dropbox website.
If you have the Dropbox client installed on your computer and you open the files directly from the Dropbox folder on your local hard drive, then any saved changed are automatically synced back to your account.

Could you please let us know of the process you followed that led to the files being reverted to previous versions so as for us to be able to look into this more thoroughly?

The same thing is happening to me too.
This is really upsetting as I have lost work.
The process is that go into the file edit it and save it - and I got back in a week or so later and it' has reverted back to a much earlier version.
I have tried to retrieve files by going onto dropbox online - and there isn't even a version history.
I don't think I will be using dropbox anymore as I can't trust that I won't lose work anymore.
Can you please advise if there is another way to retrieve files?
There seems to be a major bug in Dropbox since version 62.4.103 (Windows) that results in Dropbox locking files. The application cannnot write to the file, the file is then deleted. And it may then be restored from Dropbox (an old version).
It is resulting in chaos my end, and I have turned dropbox off for now (having been a paid member with two full subscrioptions for a decade or so). Very sad...
I hope they get their skates on and get it sorted soon -- data corruption will be a business-enter for Dropbox.

I am a fairly advanced user of Dropbox, and have been for at least 8 years; I have never had an issue until this past month. A file that I open once a month to track a note-due has reverted to a September 2018 version, sometime between Dec 19, 2018 and Jan 03, 2019 ... after I had modified it monthly between Sept and Dec without incident. When I go to version history, I only see ONE version with a date a few days AFTER the modified date showing for the current file. I have modified this file every month for 2 years; I should see a long list of version history?!? I am now very concerned about our data integrity in Dropbox given this development. I have not added / deleted or changed devices and have no other issues. Other files I have checked that I know I access & modify all show various (appropriate) version history. Yes, this is clealry an anomaly, but very disconcerting Dropbox!! Don't be arrogant about this ... it is really happening people! Please dig deep and figure out what is happening ... and fix it.
