I'm scanning documents with color on my iOS app, but they're coming out as black and white.

Are you, by any chance, using the standalone Dropbox Scan app on your iOS device? If yes, I’m afraid that this is no longer supported, as mentioned here.
Have you tried using the scanning feature of the Dropbox mobile app instead and the issue persists there, as well?
If it does, and you’re not on a free Basic account with more than 3 devices currently linked, I'd like you to reinstall your Dropbox mobile app and let me know if that makes any sort of difference.
