If I make a folder "available offline" does that apply to all the subfolders?
What version of the desktop app is this in?
When uising the file explorer on the right-click context menu, I select "make available offline" on a folder/directory. does that request change all the files and is change all the files and recurse in all the subfolders too?

If you select Make available offline or Make online-only on a folder, than all of the content in that folder will be marked as such as well.

Yes. Everything in the folder selected (files and sub folders) will be marked as such.
One thing to note, however, is that if you mark online only but then use the file on your device it doesnt auto go back to online only (its downloaded to open it). So you may need to do it frequently.
