Allow AppData(or any) Folder on my computer to be backed up

There's already another idea but it has been closed.

I'm floored this wasn't a easy/obvious idea that I would expect to be implemented many years ago.

Why is the backup feature so restrictive on what I can backup?

Please (re)consider or I'm curious why not?
