My manager receives email on Disabling of Web Hook URI for my Dropbox for Business App from The Dropbox Platform Team <api-support@dropbox.com> with the Subject: Dropbox webhook URI disabled
He wants to change the email address where this notification email is sent.
How can we do this ?

Emails about API apps like this, such as about the status of a webhook URI, are sent to the email address on the account that owns the relevant API app.
If you wish to change the email address on your account, please refer to the instructions here: https://help.dropbox.com/accounts-billing/settings-sign-in/change-email
Alternatively, if you need to transfer ownership of the API app itself to another account entirely, open an API ticket here: https://www.dropbox.com/developers/contact
