I have edit access on an Excel file but I can't save my changes through the Dropbox Android app

I can open an excel file with sheets that has been shared with editing access. I can open to edit...

You arent opening Excel if you are choosing Sheets. You are using Google Docs to edit the file - Sheets is part of Google Drive.
If you want to open in Excel you'll need to select that if its an option. If not you need to check with Microsoft / the OS of your device to see why it isnt showing as an option.

1 open Dropbox
2 select file
3 select "open in" box at bottom LHS of screen. Opens with sheets
4 edit a cell.
5 select "save" at bottom RHS of screen which takes me to the screen shown earlier.
