Can you open your local Dropbox folder now, and send me a screenshot of the syncing icons you see next to the files you set as online-only?
Is there any third-party app that could be accessing these files, which would also explain why they don’t remain as online-only for long?

There is a third party app that was one of the folders that was taking up so much space. Unfortunately, I was having issues with that integration as well so I decided that Dropbox isn't going to work for us right now.
