How can I add a 3rd level of headers in my Paper docs?
I often find myself needing three levels of titles, and an H3 element would be very useful.

I'm glad to let you know that this option already exists. Just type 3 #'s and leave a space and you're good to go!

I love the H3 setting, but would find it more useful if I could collapse it, just like I can the H2 and H1 headings. Is this possible or would you need to add this feature?
