The star feature is great.  Amd the default color could still be blue.  But having a palette of colors could allow more information like ranking, assigning and more.  If adding a drop down color menu ruins the simplicity of starring, perhaps a user setting for that folder could be used for people who want this option, either for their account (suggested, tho option by folder, a more involved creation task, would allow that user to choose simplicity or complexity based on how they use that folder).

As the Starred files feature is only used to get quick access to frequently used files, is it possible that you're looking for a different feature entirely?
