Temporary files are created for Office files only in the Dropbox folder

Simply uninstalling or closing the Dropbox app, shouldn't remove your Dropbox folder; would you mind checking, just by closing the app and let me know the results please?

    Have you also checked the version history of these files? Does it show more details on the temp files that keep being created?
