View but not store in File Explorer
I think I'm confusing myself...is it possible to install the app so that I can view all of my online Dropbox content within File Explorer without storing it locally? Similarly, if I drop files to Dropbox by way of file explorer, can I set it so that it is only stored online and not on my local machine?

You can't access the files directly in Explorer without them existing locally.
If you just want to view the files, use the Dropbox website.
