There's a few topics on this already, but none with my specific issue.
Dropbox app is definitely installed on my Surface Pro and I am actively using it throughout each day. However, the Dropbox icon keeps removing itself from my system tray.
Looking at Taskbar Settings > Select which icons appear on the taskbar ...Dropbox keeps turning off, after about an hour. I continually turn it back on, but then the icon disappears and the setting goes to OFF again.
Does anyone know how to keep it on, so the icon remains in the taskbar?

Same thing is happening to me. I can add the icon to taskbar via Windows 10 settings, but if I restart the computer or if the computer is off and I cold start, the icon is not on the taskbar. In Settings it has been turned off from appearing again. My version of the program is 143.4.4161.

It seems you're using the beta version of the app, which could justify this behavior. Go into your account settings on the Dropbox website and turn Early releases off.
Once you do this, make sure to re-install the stable version of the app.
Also, @RBinPerson have you made sure your icons aren't automatically hidden by Windows? Is it visible when you click the small white arrow to show all system tray icons?

My icon was always visible on the taskbar tray, right next to my McAfee icon and OneDrive icon, until March 1, when Dropbox updated. Now the icon remains hidden (I have to click the up-arrow to reveal the other taskbar icons to see the Dropbox icon). I want the Dropbox icon to be visible on the taskbar tray again. I've gone into Settings and told it multiple times to "select which icons appear on the taskbar." Once I do that, it does appear. However, if I turn off my computer or restart it, Settings turns that selection off, and the Dropbox icon no longer appears on the tray.

Interesting behavior there, although I have to admit that it sounds like your OS might be the culprit behind this.
Are there any pending OS updates for your device?
One more thing you can try is uninstalling the app and re-installing it in order to see how this is going to go.

Had the same issue with version 143.4.4161.
Taskbar icon display option would continually reset after a restart of Dropbox.
Uninstalled Dropbox, reinstalled with an hour per desktop and laptop to re-index files.
The issue has now returned with Dropbox version 144.4.4491.
Note in both cases after an app update, the taskbar setting to select which icons should appear contained two entries for Dropbox
<Dropbox 143.4.4161 and Dropbox>
and now
<Dropbox 144.4.4491 and Dropbox>
After the reinstall only a single entry <Dropbox 143.4.4161> was shown.
The procedure to continually uninstall and reinstall after an app update is not a viable workaround.
