In short, No, leaving the shared folder from your account does not delete it from the owner or other members.
Alternatively,
Have the person create a "view only" shared link, that way you'll be able to access the file without it counting toward your account. You can read more about that below

However, that isnt quite what was asked. If you delete the files without leaving the share then YES it will also delete from the other persons account.
