How to safely remove shared folder from hard drive, owned by a student who graduated and left?

Just following up for future viewers of this thread who may find themselves in a similar situation.

This case is a perfect candidate for Selective Sync, which will allow you to choose which folders are removed from your hard drive but are still stored on dropbox.com. Read more about Selective Sync here, including on how to enable it.
